Sticky Date Pudding with Miso Butterscotch Sauce
A classic sticky date pudding with a little savoury balance from white miso in the rich butterscotch sauce. Warm, comforting and perfect served straight from the oven with plenty of sauce.

Ingredients
Sticky Date Pudding
- 1¾ cups (245g) pitted dried dates, roughly chopped
- 1¼ cups (310ml) boiling water
- 1 tsp bicarbonate of soda
- ¾ cup (165g) firmly packed brown sugar
- 60g butter, chopped into small cubes
- 2 eggs
- 1 cup (150g) self-raising flour
Miso Butterscotch Sauce
- 165g butter, chopped
- ¾ cup (165g) firmly packed brown sugar
- 1½ tbsp white miso paste
- 300ml pouring cream
Method
1. Prepare the dates
Preheat the oven to 180°C (160°C fan-forced).
Place the chopped dates, boiling water and bicarbonate of soda in a bowl. Stir to combine and leave to stand for a couple of minutes.
2. Make the pudding batter
Place the brown sugar and self-raising flour in a large bowl and mix to combine.
Add the eggs and cubed butter, then pour in the warm date mixture.
Mix until well combined and the pieces of butter have mostly melted into the mixture.
3. Bake
Pour the mixture into a greased rectangular baking dish and smooth the surface.
Bake for approximately 55 minutes, or until a skewer inserted into the centre comes out clean.
Allow the pudding to rest in the dish for 5 minutes before cutting into portions.
4. Make the miso butterscotch sauce
While the pudding is baking, place the butter, brown sugar, white miso and pouring cream in a medium saucepan over medium-high heat.
Bring to a simmer, whisking occasionally, and cook for approximately 8 minutes, or until the sauce has thickened slightly.
5. Serve
Cut the warm pudding into portions and serve generously with warm miso butterscotch sauce.
For the best result, spoon plenty of sauce over the pudding just before serving.
