Asian-Inspired Slaw
A fresh and crunchy slaw with wombok, carrot and shallot, finished with a creamy lime and Kewpie mayonnaise dressing. The perfect fresh side for Korean fried chicken.
Serves: 4
Ingredients

1 baby wombok, or ½ large wombok cabbage, finely shredded

1 carrot, coarsely grated

1 shallot, finely sliced and separated into rings

Kewpie mayonnaise, to taste

½ lime

Freshly ground black pepper, to taste
Method
1. Prepare the vegetables
Place the shredded wombok, grated carrot and sliced shallot in a large bowl and toss to combine.
2. Make the dressing
Zest the lime, then squeeze in the juice.
Add the lime zest and juice to enough Kewpie mayonnaise to generously dress the slaw. Stir well to combine.
3. Dress the slaw
Pour the dressing over the vegetables and toss until everything is lightly coated.
Season with freshly ground black pepper to taste.
